The first question is simple: what should the guest feel when they enter? Should the restaurant feel elegant and calm? Or should it be dynamic, casual and full of energy? Is the guest coming for a business dinner, a family lunch, a date, a quick meal or an evening with friends? The answer changes everything. A premium restaurant needs a different approach to light, music, table spacing and furniture than a bistro near an office building. A breakfast place needs something else again. So does a hotel restaurant.
